The natural processing method—though seemingly simple—requires tremendous precision and patience. Freshly picked cherries aren’t immediately pulped but are instead spread out whole on raised African drying beds. There, under the Rwandan sun, they dry for two to three weeks, turned daily and carefully sorted. During this time, the beans ferment naturally inside the fruit, gradually absorbing its sweetness, deep fruit flavors, and subtle wild aromas. The station's workers oversee every stage—monitoring moisture levels and protecting the cherries from mold and overheating—because here, precision is the key to quality.
The result is a brew bursting with juicy nuance. The first sip reveals layered aromas of physalis and red wine, which evolve into notes of fresh orange and soft, succulent nectarine.
This is a coffee with a full body and deep fruity expression, a perfect example of how processing can transform a bean into something almost magical. Rwanda Simbi Natural is the sister lot of Rwanda Simbi Honey—both from the same origin, yet telling very different stories. One is wild, intense, and sensual; the other more luminous and refined.
