The beans come from Kirinyaga, specifically from the Karii cooperative, located on fertile volcanic slopes at elevations of up to 1800 meters. In this region, farmers deliver only ripe cherries to the processing station, where they are carefully hand-sorted even before the processing begins. The cherries then go through a pulper, which separates the pulp from the beans. After that, the beans are fermented—usually for several hours, depending on the temperature and weather conditions. This fermentation is a crucial step, as it allows natural enzymes to break down the remaining mucilage surrounding each bean.



Once fermentation is complete, the beans are washed in clean water. The final stage is drying—the beans are spread out on raised beds, where they dry in the sun for several days. During this period, they are regularly turned and covered when it rains or when the sun is too intense.



This entire process—known as washed processing—gives the coffee exceptional clarity and transparency, allowing its natural characteristics to shine.
