ABOUT THE COFFEE
El Diviso is Nestor Lasso's farm, one of the most progressive in Colombia when it comes to working with fermentation. This lot is an example of a modern approach to the process. Oxidation, anaerobic fermentation, thermal shock – everything is done consciously to build intensity without losing control. In the cup, it is much more expressive than in the Geisha. Tangerine, tropical notes, and a slightly winey character.

1. Bloom 75g water: 0-0:10,
2. 150g water pour: 0:30-0:40,
3. 225g water pour: 1:00-1:10,
4. 300g water pour: 1:30-1:40.
Total drawdown should finish around 2:10 - 2:20.
Store in a cold and dry space.
