ABOUT THE FARM AND THE PRODUCER


Nguisse is one of those producers for whom coffee cultivation is much more than just a random agricultural activity. For many Ethiopians, coffee is a symbol, a source of national pride, and a way of life – a group that certainly includes this finalist of last year's Cup of Excellence! His small farm, approximately 8 hectares in size, is located in the Bensa region, which in our opinion holds the highest quality potential. The crops here reach well above 2000 meters above sea level and usually consist of selected, single botanical varieties.



A family business run by the Ureña family, where everything runs like clockwork. We have been visiting them for many years, and it is a beautiful thing. Vista al Chirripo is the highest-altitude plantation on the farm, where right next to the trees of this Caturra stands a small wooden house with windows overlooking the highest peak in the country. It is impossible to describe in words, but if you want to impress someone more than ever before, you take them right there and wait together for the sunrise over a cup of coffee. Just don't kill the mood by asking about the click count, please.



ABOUT THE COFFEE PROCESSING ON THE FARM


Ethiopia: Processed as natural – drying the coffee seeds within the whole fruit. Freshly harvested cherries undergo an initial selection where those with defects are discarded. Then, they are spread out on so-called African beds – long tables, sometimes stretching for dozens (!) of meters, with a mesh lining that allows for even air circulation throughout the process, resulting in homogeneous drying. The whole process takes between 25 and 30 days, depending on the weather.



Costa Rica: First, the cherries undergo a short pre-drying process, and then they are sealed for 2 or 3 days in airtight tanks for fermentation with limited oxygen. Then, drying on long African tables under something that looks like the plastic tunnels used by grandparents in allotment gardens, you know, the ones where tomatoes and cucumbers grow. Only about seven times longer.



ROASTER'S OPINION

This is our idea for this espresso: we created a roast profile that showcases the beautiful floral and fruity notes typical of high-quality Ethiopian coffees, while simultaneously offering a good deal of chocolatey-dessert depth to balance the acidity and give the cup equilibrium. As a result, whether you brew it in an espresso machine, a moka pot, or even as a filter coffee, you will get a full, round, and complex coffee with a long-lasting, syrupy aftertaste!
