Idido is a classic that needs no introduction, but this time we’ve cranked up the tempo. Forget about a polite cup of tea – the Anaerobic Natural version is a fruit bomb that takes no prisoners. So, what’s the deal with this Aerobic? Oops, sorry, Anaerobic?
In short: it’s anaerobic fermentation. The whole coffee cherries (Natural) are placed in hermetically sealed tanks from which oxygen is removed. What does this achieve? Control: Bacteria and yeast work under specific conditions, producing unique esters. The result? The coffee gains incredible depth, intense sweetness, and a slightly boozy character. The very best of Ethiopia is condensed and served as a liquid coffee potion.
Coffee from Ethiopia is usually synonymous with elegance: jasmine, bergamot, and citrus. Idido in anaerobic processing retains this noble base but wraps it in a powerful body and notes of ripe tropical fruits and strawberries. It is thick, sweet, and very, very intense.
