Specialty beans from Guatemala roasted at Heresy by the 2020 Polish Roasting Vice-Champion. Light roast, designed for filter or cup brewing. A very clean profile featuring fruity notes with a hint of sweet chocolate.

PROCESSING

Harvested fruit was fermented 36-40 h after picking, and only then wet-processed. The grains were dried both on the patio and on raised beds. To avoid excessive heat and preserve quality, Raul always uses a thick layer of grains, which he moves every 40-60 minutes, depending on the sunlight. The entire drying process takes place over 12-14 days.

THE FARM

Finca La Soledad has a reputation both in Poland and in the coffee industry, with beans that roasters and coffee fans alike look forward to. Raul's family has been growing coffee for 5 generations and they never stop looking for new ways to improve the harvest. In fact, they have been awarded with the Cup of Excellence on several occasions. La Soledad has ideal conditions for growing coffee, thanks to its unique microclimate and volcanic soil. The farm is 90 hectares in size, but as much as half of the land is preserved as natural forest and part is dedicated to avocado cultivation to maintain soil balance. Soledad is the permanent base for our trips to the origin, and the close relationship with Raul and his family means we know the beans inside out!


ROASTER'S COMMENT

Here is an example of a Guatemalan classic from the Acatenango region. Yummy! Clean, slightly fruity, cloaked in chocolate sweetness. Raul is one of the most talented producers I've met so far. This guy has an expanded version of the coffee-growing encyclopaedia loaded in his head. Plus, he never clicks "remind me later" when there are new updates to be loaded. Ladies and gentlemen, please enjoy the true school representation of this origin!


PACKAGING

The coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! A plastic jar turns out to be pretty eco-friendly, just remember to put it in the right container, or find a creative way to reuse it at home.
