Heresy is a Polish coffee roastery, offering specialty beans evaluated with at least 86 points. The brand focuses on selecting the most interesting microlots, emphasising above all the role of the farm, where most of the coffee's flavour is formed. The owners value constant cooperation with farmers, direct and sustainable distribution, and regular trips to the plantations.

The beans are conveniently packed in fully recyclable or reusable jars. The label describes the flavour in the form of a pie chart, consisting of fruity, floral or Maillard notes in varying proportions. The limited offer consists of three coffees roasted for filter methods and one dedicated to espresso.

The lack of the flavour notes, the focus on the role of farmers, the absence of brewing recipes or the 252-gram jars are just some of the "heresies" proclaimed by the brand's founders, to reform the approach to coffee.

The creators of Heresy are Piotr Jeżewski - Q-Grader and Vice Champion of Polish Roasting 2020, and Karolina Kosno, previously associated with Coffeedesk and Specialty Coffee Association.

A profile characterized by high complexity with winy, fruity and caramel notes. Country: Costa Rica Region: Chirripó Producer: rodzina Ureña-Rojas Farm: Cafe Rivense Varietal: caturra, catuai Processing: natural Alttiude: 1700 m a.s.l. Harvest: 2023 Cupping score: 87 / 100 pts PROCESSING First the cherries go through a short pre-drying process. Then they are dried on long African tables under something that looks like your grandparents' foil box on the plot, you know, where they grow tomatoes, cucumbers. Only like seven times longer. THE FARM The family business of Mr and Mrs Ureña, where everything runs like Swiss clockwork. We've been going there for three years now and it's a beautiful thing. Vista al Chirripo is the highest plantation on the farm, where a small wooden house stands right next to the trees of this caturra, with windows spanning the highest peak in the country. It cannot be described with words, but if you want to impress someone the most in your life, take that someone right there and wait together for the sunrise over a cup of coffee. Just don't kill the mood with a question about the number of clicks, please. ROASTER'S COMMENT For the third year in a row, we are buying coffees from Ricardo and his cheerful family team. And for the third year in a row, a lot of El Higueron plot in a jar! A rite of Costa Rican fruity natural: high intensity, winey sweetness, lots of body, even more complexity! A profile featuring full-bodied, fruity-wine sweetness, supported by tropicals, florals and caramel elements for balance. Country: Guatemala Region: Frijanes Producer: Castillo Family / Erik de la Roca Varietal: H1 Processing: Natural Altitude: 1700 m a.s.l. Harvest: January - February 2023 Cupping score: 87.5 / 100 pts PROCESSING After harvesting, the coffee is thrown into a tank across the fruit and lies there, fermenting a little, for about 24 hours. It is then spread out to dry on African beds. The process is carried out in a professorial manner - zero fermenting impurities, instead 120% of the meat is squeezed out of this bean here. THE FARM Agua Tibia is managed by a producer friend of ours, whose coffees from La Esperanza we've had in the roaster before. Great conditions, altitude and the dedication of the entire team under Erik's leadership make these coffees simply better and better every year! H1 is one of Central America's most interesting hybrids, combining disease resistance with a wonderful effect in the cup, behind which are the genes of Sudan Rume, an Ethiopian fruity-floral variety. Then they spend the night doing crazy things, that is fermenting. The next morning - a splash of water to tidy up! Then recuperating in the sun from 8 to 14  days. THE FARM The Thimu processing station belongs to, as far as we know, the largest cooperative in Kenya, called Baragwi. In turn, the region where the fruit is grown, Kirinyaga, is famous throughout the coffee world for its good quality crop. ROASTER'S COMMENT Classic Kenya! No need to write a two-page essay here. Harvest: November - December 2022 Cupping score: 87.5 / 100 pts PROCESSING A small river, the Koitobos, runs close to the farm - the ripe fruit is washed with water taken from this very rivulet and then dried whole on African beds. The process usually takes between 21 and 28 days. THE FARM Endebess Estate is a plantation located in a slightly less popular region of Kenya, the Northern Rift Valley, very close to the border with Uganda. The farm itself sits at the foot of Mount Elgon, a now extinguished volcano that lies on the border between the countries. ROASTER'S COMMENT Kenya natural! But what do you mean? Increasingly, this process is appearing in coffees from a country associated as a mecca for washed-down processing. This is the most budget-friendly coffee in Heresy's portfolio and perhaps the most heretical! Pastor is a blend of coffees from the previous season, which proves that there is nothing wrong with transparently communicating the harvest date! We roast this coffee darker, though in a way that makes it suitable for a variety of brewing methods. It will work especially well in an espresso machine or a mokka pot, and for fans of lower acidity, higher bitterness and sweet chocolate and caramel notes, also in filter methods. That's why we call it an all-purpose blend. Pastor doesn't offer coffees eternal life, but gives a second one to those that deserve it! WHAT A HERESY Almost every roaster has some coffee left over from the previous crop when new, fresher coffee from the last harvest comes in. These beans are often still good, especially if their quality was high from the beginning, although it usually happens that they lose some intensity and sometimes there are notes associated with some woody impression which appear. Depulping, washing, a moment of fermentation in the tank and drying on African beds, in the ideal conditions of the Gicumbi region. THE FARM Nova Coffee is in the hands of Agnes and Felix, a married couple who founded the company relatively recently, in 2015. They are both coffee producers from a 155-hectare farm, as well as exporters working with thousands of small producers. The entire crop is located in the northern part of the country, around Lake Muhazi - google it and drop your jaw. ROASTER'S COMMENT The reflection of the terroir in the cup here is a strong 10/10. It is clean, crisp and distinctly fruity. High sweetness with ripe, quite intense acidity. Red fruit, citrus, some flower and herb in the background. A washed Rwandan bourbon in its full glory! Light roast, designed for pour-over brewing methods or a regular cup brew, but will also come out neatly as an espresso. A surprising profile, unusual for a "typical" robusta, featuring very high sweetness and fruitiness with notes of wine and fine wood. Country: Brazil Region: Rondonia – Campo Novo Producer: Angela Maria Coutinho Pessoa Varietal: Canephora Processing: Natural Altitude: 213 m a.s.l. PROCESSING Classic natural. Aight, let's call it classic +. Because the harvested cherries are not immediately spread for drying, they're fermented a little for the start. Hence in this coffee the obvious fruitiness characteristic of such a process. THE FARM The farm is affiliated to a cooperative of family farms in the Rondônia region - LaCoop Brasil. This is where the most coffee is produced in the Brazilian Amazon, and the cooperative is helping them to embrace better and better quality and production methods, while taking care of the environment, which is why they are Fairtrade certified. They're so good at it there that they got the world's first geographical indication for Amazonian robusta (!), you know, something like the Polish gorals have for oscypek and the inhabitants of Poznań for St. Martin's croissant. ROASTER'S COMMENT There is going on here, going on and quite a lot of it. There's both a pronounced ferment-fruit sweetness and a whole caste of dry-flavours. Something like visiting those trendy niche perfumeries. A stunning cedar in the heart note, just wait for those spices in the base. And so on. A caffeine kick for free! Harvest: February 2022 PROCESSING Here we have a pure geisha fruit from natural processing. We asked Julio this year to separate this cascara, which was then hand-searched to get rid of any impurities. Mother dear. Holy Lord. The whole symphony orchestra came out of it. THE FARM El Zapote is one of those farms that evoked hard to describe, extremely positive emotions. Beautifully situated at the base of two volcanoes, with wilderness at the bottom, add a rushing, winding river and a jungle vibe. Julio is a great guy, with a vast knowledge of coffee and a sleeve full of anecdotes. Open-minded, willing to experiment and engaging in unusual practices - we'll show the results of his work more than once! ROASTER'S COMMENT While serving this cascara, we get asked if we added sugar. First, the whole cherries spend 2 days in sealed tanks, accompanied by carbon dioxide. Then depulping - separating the bean from the fruit. Then another two days of fermentation, this time under water and drying. PRODUCER Sebastian is one of those most innovative and quality-crazy Colombian producers. Exotic botanical varieties, lab-grade processing equipment, an open mind and a willingness to push barriers, that's what we're talking about here. El Placer is a world-class coffee invention. ROASTER'S COMMENT Is this the most expensive coffee in heretical history? Yes. Is it the best coffee we've closed in a jar? Fair enough. This is, ladies and gentlemen, the top of the tops, the Marcellus case, the cauldron by the rainbow, and so on. An absolute, worldwide production masterpiece. Country: Costa Rica Region: Alajuela Producer: Francesca & Oscar Chacon Farm: Las Lajas Varietal: caturra, catuai Processing: red honey Altitude: 1300 - 1825 m a.s.l. Harvest: June 2023 Cupping score: 87.5 / 100 pts PROCESSING Red honey, which means a certain layer of pulp is left on the seed for fermentation and drying, while we say "thank you, bye!" to the peel of the fruit. Everyone has their own standards and naming in the context of this processing, here Francesca and Oscar wanted to achieve a fair amount of fruitiness while maintaining high clarity. And it worked out! THE FARM Francesca and Oscar are the siblings behind the Las Lajas brand. In 2023, it's a kind of Real Madrid among farms. If you prefer comparisons to literature, well, at least Chekhov. They became world famous for their innovative approach to processing. They are pioneers in the subject of juicy and fruity Costa Rican naturals. This year we were able to visit the farm and taste the lots together, which had just left the drying tables. And voila! A clean, sweet, simple caramel brew with notes of red fruit and a citrus stamp in the background. From a legend among producers, the world-famous Marysabel Caballero. This one doesn't even need a special introduction! It is impossible to go wrong here. ROASTER'S COMMENT It is impossible to drink the same blend twice. Heraclitus knew this, and we believe the guy. However, he had no way of grasping the fact that life is like the helium-6 isotope - a wildly unstable joke of the universe. We know that, and that's how Elixir came to be! A profile characterised by intense notes of flowers and yellow stone fruits and a candy-like sweetness. Country: Ethiopia Region: Yirgacheffe Producer: Negusse Debela Varietal: wolisho, dega Processing: washed Altitude: 2050 m a.s.l. Harvest: January 2023 Cupping score: 87.5 / 100 pts PRODUCER As is almost always the case with Ethiopia, the coffee is a huge blend of cherries from several hundred small producers, in this case from the village of Worka Chelbesa. A washing station managed by Mr Negusse Debele operates nearby. The coffee trees grow here semi-wild, in the forest that surrounds the whole area. PROCESSING A classic Ethiopian washed with slightly extended fermentation and an above-average focus on quality. The fruits stay in ceramic tanks for 72 hours before washing. They then go to a sorter, which separates beans with large differences in density. Then into water for another 2 hours and drying, which takes only 10 days in this climate. ROASTER'S COMMENT How long it's been since we've had a coffee from this legendary origin! We finally found a lot that charmed us from the first sip. It is as the terroir commanded: flowers, yellow fruits, candy sweetness, all in a clean and transparent entourage. You can take it blindly, scout's honour. Harvest: January - February 2022 Cupping score: 88.5 / 100 pts PROCESSING After harvesting, the coffee is thrown into the depulper, which gets rid of the fruit. Then, already naked, it goes into fermentation tanks for 24 hours. And then is spread for drying on African beds. The process is carried out in a professorial manner - no impurities, 100% of the meat is squeezed out of this geisha instead. THE FARM Agua Tibia is managed by a producer friend of ours, whose coffees from La Esperanza we've had in the roaster before. Great conditions, altitude and the dedication of the entire team under Erik's leadership make these coffees simply better and better every year! ROASTER'S COMMENT Yeah, we don’t usually brag about geisha-this and geisha-that. But this is just an excellent coffee that shows in its profile everything this elevated variety has to offer. A very clean profile featuring fruity notes with a hint of sweet chocolate. Country: Guatemala Region: Acatenango Farm: Finca La Soledad Producer: Raul Pérez Variety: Anacafe 14 Process: Washed Altitude: 1650 m a.s.l. Harvest: February 2023 Cupping score: 86.5 / 100 pts PROCESSING Harvested fruit was fermented 36-40 h after picking, and only then wet-processed. The grains were dried both on the patio and on raised beds. To avoid excessive heat and preserve quality, Raul always uses a thick layer of grains, which he moves every 40-60 minutes, depending on the sunlight. The entire drying process takes place over 12-14 days. THE FARM Finca La Soledad has a reputation both in Poland and in the coffee industry, with beans that roasters and coffee fans alike look forward to. Raul's family has been growing coffee for 5 generations and they never stop looking for new ways to improve the harvest. In fact, they have been awarded with the Cup of Excellence on several occasions. La Soledad has ideal conditions for growing coffee, thanks to its unique microclimate and volcanic soil. The farm is 90 hectares in size, but as much as half of the land is preserved as natural forest and part is dedicated to avocado cultivation to maintain soil balance. Soledad is the permanent base for our trips to the origin, and the close relationship with Raul and his family means we know the beans inside out! ROASTER'S COMMENT Here's an interesting treat, as we have a brand new hybrid botanical created by the Guatemalan coffee institute, Anacafe. The combination of catimor and pacamara has resulted in a varietal that is not only resistant to typical coffee diseases, but offers super juicy, fruity potential. Two in one! Classics and fruit. After picking, the fruits are thrown into a depulper, which leaves a layer of sticky pulp on them. A moment of fermentation and the cherries are spread out to dry. PRODUCER Although we are quite familiar with the coffees from El Ocotillo, a small village in the Santa Barbara region, this is the first time we have bought beans from Carlos. As well as growing trees, this gentleman has worked for eons at the San Vicente mill, which exports all these diamonds to us year after year. And that's his main job. Because his farm is... 2 hectares. Sic! He doesn't have to. And that's why it tastes so good. ROASTER'S COMMENT Is this the best Santa Barbara coffee we've had in years? I think it is. This is where words can't express. That's not the way to go here. And what the heck, we hardly ever do, but we live once, and let the sky fall: pink mentos, raspberry yoghurt, tropical juice. Oops.
